Individual Healthy Blueberry Crumble Topping 🫐
Crumble topping:
3/4 cup old fashioned oats
2 tbsp almond flour
2 tbsp chopped walnuts
1/2 tsp pumpkin pie spice
1/8 tsp cinnamon
2 tbsp sugar free maple syrup
2 tbsp cold doniafarms sea salted butter
Blueberry filling:
1 1/2 cups fresh blueberries
1/2 tsp vanilla extract
3 tsp lemon juice
1 tbsp corn starch
1/4 of a lemon’s zest
Greek yogurt topping:
1/2 cup oikos_canada 0%mf plain Greek yogurt
1 scoop vanilla protein powder
Preheat oven to 350°f. In a bowl mix your oats, almond flour, walnuts, pumpkin pie spice, and cinnamon. Add in your maple syrup and butter and then mix together to produce your crumble (I used my hands). In a second bowl mix all of your filling ingredients.
Fill two greased ramekins with equal parts of the filling and top with your crumble mix. Bake for 30-35min or until the crumble is golden and you can see the filling bubble around the edges. Allow to cool to room temp and then refrigerate for a few hours (or overnight). Serve with a dollop of the Greek yogurt topping.
