Oats:
1/2 cup old fashioned oats
1 cup low sodium chicken broth
1 tsp chopped fresh thyme
1 tbsp fresh grated Parmesan cheese
1/8 of a lemon’s juice
A pinch of diamond crystal salt kosher salt
1/8 tsp black pepper

Toppings:
1/4 of a shallot sliced
3-4 slices of jalapeño diced
1 sunny side up egg
1/2 cup sautéed arugula
1 tbsp fresh grated Parmesan cheese
1 tbsp chopped chives
A sprinkling of chili flakes
1 slice of pan fried prosciutto chopped

In a small pot bring your chicken broth to a boil. Reduce the heat to a simmer and pour in your oats. Cook for 10ish minutes, occasionally stirring, until you reach your desired consistency. Remove from the heat, cover, and allow to sit 2 min. Stir in your pepper, salt, thyme, Parmesan, and lemon. Scoop into a bowl and top with your shallot, jalapeño, egg, arugula, Parmesan, chives, chili flakes, and prosciutto.
