Stove top plum chicken 🍗🥘
My lovely neighbor dubs loses her chubs has a plum tree loaded with ripe plums. She graciously offered for the neighbors to help themselves so needless to say I had to get to work thinking of some new recipes to try out 😋
3 boneless skinless chicken breasts
Granulated garlic
Pepper
diamond crystal salt kosher salt
1-2 tbsp chosen foods avocado oil
Parsley (optional)
Plum sauce:
1 tbsp soy sauce
1 tbsp lime juice
1 1/2 tsp grainy mustard
1 1/2 tsp Dijon mustard
2 garlic cloves
2 tsp shallot
1/2 cup heaped with fresh plums (pits removed but skins left on)

In a high powered mixer or food processor blend your plum sauce ingredients until a smooth consistency is reached. Can be used immediately or covered and refrigerated until ready to use.
Gently pound out your chicken to an even thickness. Season both sides with pepper, salt, and garlic. In a large fry pan, over medium heat, warm your oil. Place your chicken in the pan and allow to cook for 7min, until brown. Flip over, cover the pan with a lid, and cook another 7min. Flip again and top with 1-2 tbsp each of the plum sauce. Allow to cook another 1-2 minutes until the internal temp reaches 165°f. If you prefer a saucier chicken you can spoon additional sauce on top. Sprinkle with diced parsley.
