Summer Roll Salad Dressing Tips
Summer Roll Salad Dressing🥗
Dressing:
3 tbsp pb2foods powdered peanut butter
1 tsp sesame oil
1/2 a lime juiced
1 clove of garlic minced
A couple Shakes of powdered ginger
1 tsp soy sauce
A pinch of diamond crystal salt kosher salt
6 tsp water
1/2 cup cooked rice noodles (cooled)
2 tbsp chopped peanuts
1/2 of a sliced bell pepper
1/2 of a julienned carrot
3 inches of a cucumber julienned
1-2 tbsp chopped cilantro
1/4 cup of raw cauliflower rice
In a small bowl whisk together your dressing ingredients. Set aside.
In a bowl or jar layer your noodles, bell pepper, carrot, cucumber, and cauliflower rice. Top with your dressing, chopped peanuts, and cilantro.
Toss to combine.
