Tuna salad with cucumber boats
Tuna salad with cucumber boats 🥒
2 3” chunks of cucumber
1 can of flaked skipjack tuna in water
6 tsp low fat mayo
1 tbsp fresh dill, minced
1 green onion, diced
1/8 tsp pepper
1/8 tsp diamond crystal salt kosher salt
Drain your tuna and place in a small bowl. Add your mayo, dill, onion, pepper, and salt. Stir to combine and set aside. Cut your cucumber chunks in half lengthwise. Scoop out the seeds using a melon baller or spoon. Spoon in your tuna mix and serve.
