Dressing:
1/2 cup oikos_canada 0%mf plain Greek yogurt
1/4 cup low fat mayo
2 tsp dijon mustard
1/2 a lemon’s juice
1 tsp anchovy paste
1-3 garlic cloves minced (depending on how garlicky you want it 🧄)
3 shakes of franks red hot sauce
2 tsp Worcestershire sauce
3-4 tbsp silk cashew milk
1/8 tsp diamond crystal salt kosher salt
1/8 tsp black pepper
1/2 cup fresh Parmesan

In a bowl whisk all ingredients together, cover, and refrigerate for a couple hours (or up to overnight).

Salad:
1/2 a head of romaine chopped into chunks
1 3/4 cups kaslos our dough radiatori pasta
3 hard boiled eggs
1 leftover mojo pork tenderloin sliced (see yesterday’s post for recipe)
3 cups homemade croutons (see previous post for recipe)
1/2 an avocado sliced
Fresh Parmesan cheese
1 tablespoon capers

Cook pasta according to package directions, run under cold water, drain, and set aside to fully cool. Once cool, in a a large bowl, combine your pasta, lettuce, and dressing. Top with pork, eggs, avocado, croutons, Parmesan, and capers.
