Avocado Caprese Bagel🍅🌿🧀
1 toasted doughs 100 calorie gluten free everything bagel
1/2 an avocado (mashed with lemon juice, kosher salt, and pepper)
Sliced mini bocconcini cheese
Fresh basil
Fresh cracked pepper
diamond crystal salt kosher salt
maldon salt Sea salt flakes
Grape tomatoes sliced in half
Avocado or olive oil
Balsamic vinegar
Preheat the oven to 400°f.
Gently toss your tomatoes in a drizzle of balsamic vinegar, oil, kosher salt, and pepper. Place them cut side down on a small, parchment lined cookie sheet and place in the oven. Roast the tomatoes until they start to shrivel and brown a bit approx 15-20 min.
Meanwhile, toast your bagel. Spread some avocado on each bagel half and set aside. Top with cheese, tomatoes, basil, salt, and pepper.
Optional – top with a drizzle of balsamic reduction.
