Greek Baked Prawns 🦐
2 tbsp olive oil
1/2 of an onion diced
A pinch of cayenne pepper
5-6 cloves of garlic minced
3 1/2 cups diced Roma tomatoes (approx 7 tomatoes)
2 tsp dried oregano
Garlic powder
1/8 – 1/4 tsp pepper
Pinch of Salt
1/4 cup white wine
1 pound of raw prawns
Chopped parsley
Feta
Preheat oven to 425°f. Heat the oil in a large fry pan. Add onion and cook through. Add the cayenne and garlic and cook another 30 seconds or so (until fragrant). Add the tomatoes, oregano, pepper, salt, and wine. Sauté until tomatoes soften and sauce starts to thicken (about 5-10 minutes).
Toss the prawns in garlic powder and add the prawns to the pan. Cook for 30 seconds, add parsley, stir together and pull off the heat. Pour into a greased baking dish and top with feta cheese. Bake until sauce is bubbling and prawns are cooked (10-15 minutes). Top with more parsley. Serve over rice.
