Healthier S’mores single serve cookies 🍪
It’s national s’mores day!! And everyone who knows me knows that s’mores are one of my all time favorites. So in celebration of its day I had to put a spin on this camping classic and make a healthier sweet treat celebrating the classic graham cracker, marshmallow, and chocolate combo 😋
3 tbsp swerve sweetie brown sugar replacement
2 tbsp donia farms sea salted butter
1 egg yolk
1/2 tsp vanilla extract
1/8 tsp baking soda
1/4 tsp diamond crystal salt kosher salt
1/4 cup flour
1/4 cup tutti.gourmet no sugar added graham style crumbs
2 tbsp lilys_sweets no sugar added dark chocolate chips
2 love max sweets sugar free collagen+mct vanilla marshmallows

Preheat oven to 350°f. In a medium bowl melt your butter. Add your brown sugar, egg yolk, and vanilla, whisking to combine. Add in your flour, graham cracker crumbs, salt, and baking soda stirring with a spatula to fully incorporate. Add in your chocolate chips stirring again to mix in.
Divide into 2 equal potions, and roll each into a ball. On a parchment lined cookie sheet gently flatten each ball with the palm of your hand until they are both approx 3/4” thick patties. Bake for 15-20 minutes. Place a marshmallow in the middle of each cookie. Place back in the oven, under the broiler, until the marshmallow is browned and melted. Remove, allow to cool a few minutes, and serve.
