Cordon Bleu Stuffed Chicken Burgers
Cordon bleu stuffed chicken burgers 🍗🍔
Chicken patty mix:
1 pound ground chicken
1/2 tsp cumin
1/2 tsp smoked paprika
3 garlic cloves minced
3 slices of onion minced
8 tsp soy sauce
A pinch of cayenne
1/8 tsp pepper
2/3-3/4 cup Panko bread crumbs
Stuffing:
6 slices of honey ham
6 slices of pan fried speck or prosciutto broken into large pieces
2 tbsp grated sharp white cheddar (ie traderjoes unexpected cheddar or kerry gold usa reserve cheddar)
6 cloves of roasted garlic (optional)
In a large bowl mix all of the chicken patty ingredients until fully incorporated. Split the mix into 3 equal size balls. Take 1 ball and split it into 2 pieces (one slightly larger than the other). Take the larger piece and place it in a burger stuffing mold (I used the stufz stuffed burger mold) and form an open bowl shape.
Alternatively you could use a ring mold or can to shape your own patty bottom. Stuff the bowl shaped chicken with a piece of ham, a slice of speck, cheese, roasted garlic, and another slice of ham. Take the smaller portion from your original ball of chicken and flatten it into a patty shape about the size of your stuffed bottom.
Place the patty on top of the bowl and seal the two sides together with your fingers or burger press. Repeat with remaining patties. Set aside. Heat your grill and cook approx 7 min per side (until cooked through).
