Place 1/4 cup of the chocolate chips into a small bowl. Microwave in 30 sec intervals, stirring after each interval, until fully melted. Add a 1/4 tsp coconut oil to the chocolate and stir to melt oil/incorporate fully. Spoon a small amount of chocolate into the bottom of a silicone mold and tap to remove the bubbles/even out the chocolate layer.
Freeze for 5-10 min. Spoon a small amount of peanut butter on top of the chocolate layer. Freeze for 5-10 min. Melt another 1/4 cup chocolate, add coconut oil, and spoon that on top of the peanut butter layer. Before chocolate sets top with a sprinkle of sea salt. Freeze another 15 minutes (or until chocolate is solidified). Pop out of your molds.
