Roast Turkey With Cranberry Sauce Recipe
Ingredients:
1 turkey (10-12 pounds)
Salt and pepper
1 stick unsalted butter
1 onion, chopped
1 stalk celery, chopped
2 cloves garlic, minced
2 cups chicken broth
1 cup cranberry sauce
1/2 cup sugar
1/2 cup red wine
2 tbsp cornstarch
2 tbsp cold water
Instructions:
- Preheat the oven to 325°F.
- Remove the giblets and neck from the turkey cavity and rinse the turkey inside and out with cold water. Pat dry with paper towels.
- Season the turkey inside and out with salt and pepper.
- Melt the butter in a large skillet over medium-high heat. Add the onion, celery, and garlic and cook until the vegetables are soft and lightly browned, about 5 minutes.
- Add the chicken broth, cranberry sauce, sugar, and red wine to the skillet and stir to combine.
- Bring the mixture to a boil, then reduce the heat and let simmer for about 10 minutes, until the sauce has thickened slightly.
- Pour the sauce over the turkey, making sure to coat it evenly.
- Place the turkey on a roasting rack in a large roasting pan. Roast the turkey in the oven for about 3-4 hours, or until the internal temperature of the thickest part of the turkey reaches 165°F.
- Baste the turkey every 30 minutes with the pan drippings.
- Once the turkey is fully cooked, remove it from the oven and let it rest for about 15 minutes before carving.
- While the turkey is resting, strain the pan drippings into a saucepan and bring to a boil.
- In a small bowl, mix together the cornstarch and cold water to make a slurry.
- Add the cornstarch slurry to the pan drippings and whisk until the sauce has thickened.
- Serve the turkey with the cranberry sauce on the side, and the pan drippings gravy poured over the top.
