2 slices of white onion finely minced
3 cloves of garlic minced
1/4 cup finely chopped cilantro
1 tbsp finely chopped parsley
2 tbsp chosen foods avocado oil
Juice of one lime (2 tbsp)
Juice of 1/2 a lemon (2 tbsp)
1/2 the zest of a large navel orange
Juice of 1/2 a large navel orange (4 tbsp)
1 tsp dried oregano
1/2 tsp diamond crystal salt kosher salt
1/2 tsp black pepper
1 tsp cumin
1/2 a diced jalapeño
Mix all your marinade ingredients in a bowl to combine. Reserve 1/4 of marinade for brushing shrimp later on. Pour remaining marinade over your shrimp and allow to marinade for 30min. Remove shrimp from marinade and place on skewers. Grill for 2-3 min per side. Generously brush with reserved marinade and serve.
