Simple Prawn and Turkey Chorizo Paella
Simple Prawn and Turkey Chorizo Paella 🍤🍚🥘
2 tbsp olive oil
1/4 of an onion finely diced
3 cloves of minced garlic
1 tbsp tomato paste
2 diced Roma tomatoes
1/2 tsp diamond crystal salt kosher salt
1 tsp smoked paprika
1/2 tsp turmeric
2 pinches of saffron
1/2 tsp chili flakes
1/8 tsp pepper
1 cup Arborio rice
1/2 cup white wine
2 1/2 cups low sodium chicken broth
3 jd turkey farm turkey chorizo sausages, cooked and sliced
18 raw prawns
1/2 cup frozen corn, thawed (for a more authentic version substitute peas, I just prefer corn 😉)
2 lemon slices
Fresh chopped parsley
In a large fry pan heat your oil over medium heat. Add in your onion and sauté till translucent (approx 3min). Add in your garlic and continue to cook approx 30 sec, till aromatic. Add in the tomato paste and stir until the onions, garlic, and tomato paste are fully incorporated.
Add the salt, paprika, turmeric, saffron, chili flakes, and pepper. Stir to incorporate. Add in your rice and allow to toast for a minute. Add in your diced tomatoes and white wine and cook another couple minutes. Add in your chicken broth and corn, stir, and bring to a rolling simmer.
Reduce the heat to med-low and continue to simmer another 25-30mins shaking the pan every 5 min while it cooks (do not stir). Add in your chorizo and prawns pressing the prawns down into the rice/liquid so they cook. Cook for a few more mins, until prawns are cooked through. Squeeze fresh lemon overtop, sprinkle with parsley, and serve.
