Pork Rind Air Fryer Prawns🦐
1 lb large raw prawns (peeled and tails removed)
2 bags of pork rinds dotcom sea salt and cracked black pepper pork rinds
1/2 tsp smoked paprika
3/4 tsp granulated garlic
2 eggs
1 cup all purpose flour
1/2 tsp diamond crystal salt kosher salt
3/4 tsp fresh cracked black pepper
chosen foods garlic avocado oil spray
Pour 1 bag of pork rinds at a time into a food processor and grind until turned into a panko bread crumb consistency, set aside.
In 3 pie dishes make your breading station:
In one dish mix flour, salt, and pepper. In a second dish whip your 2 eggs. And in your last dish mix the pork rind crumbs, garlic, and smoked paprika.
Dredge the prawns first in flour, then egg, then pork crumbs (press into crumbs to stick). Gently shake off the excess and place in your air fryer. Repeat with remaining prawns. I use a rack in my air-fryer to cook all prawns at once amongst two layers. Prior to cooking spray breaded prawns with the garlic avocado oil.
Air-fry for 7 min at 400. Take out top rack to expose prawns in the bottom layer. Air-fry the bottom layer another 4 min.
Put top rack back in the fryer and air-fry another 5-7 minutes.
