Recipe to – with watermelon finally starting to be in season I couldn’t wait to whip up my favourite refreshing and light summer salad 😋
1 slice of watermelon cubed
1/3 of a cucumber sliced and quartered
1/4 cup feta cheese
1-2 tbsp chopped fresh cilantro (can sub mint or basil if you prefer)

maldonsalt flaked sea salt
In a large bowl mix your watermelon and cucumber. Top with cilantro, feta, a generous drizzle of balsamic reduction, and a sprinkle of sea salt.
