2 slices carbonaut baking low carb seeded bread
1 handful arugula
1 avocado (mashed with 1/4 of a lemon’s juice and salt/pepper)
3 halved grape tomatoes
Diced fresh basil
2 eggs
Chili flakes
Fresh cracked pepper
diamond crystal salt kosher salt
2 tsp donia farms sea salt butter
2 tsp creme fraiche, sour cream, or Greek yogurt

In a small pan place your butter and 2 eggs. Over medium high heat cook your eggs, stirring constantly with a spatula. To soft scramble the eggs cook for 30sec, then remove from the heat 30sec, stirring the entire time and repeating until eggs are almost done. Add salt, pepper, and your sour cream. Stir to combine and set aside.

Assemble your toast by layering arugula, mashed avocado, scrambled eggs, tomatoes, and basil. Top with chili flakes and pepper.
