3 boneless skinless chicken breasts

1/2 a diced shallot
1/2 a sliced jalapeño
1/2 cup grated both well cheese maple wood smoked cheddar
2/3 cup cubed fresh pineapple
3 slices of bacon cooked and diced
Fresh chopped parsley
Preheat your oven to 375°f. Gently pound out your chicken to 1/2” thick. Season both sides with pepper, chicken salt, and garlic. Place on a greased cookie sheet. Brush the top of each breast with 2-3 tbsp bbq sauce.
Sprinkle with shallot and jalapeño. Top with the pineapple and cheese. Bake in the oven for 20min or until cooked through. Before serving sprinkle with bacon and parsley.
