Batter:
50g oats
4 tbsp chocolate protein powder
1 tbsp cacoa powder
1 scoop vital proteins collagen powder
1 tsp baking powder
A pinch of diamond crystal salt kosher salt
1/2 tsp vanilla extract
1/2 cup + 1 tbsp + 1tsp silk cashew milk

Coconut pecan date “frosting”:
7-8 ndmedjooldates medjool dates pitted
1/3 cup warm water
3-4 tbsp chopped pecans (or walnuts)
2-3 tbsp unsweetened shredded coconut

Preheat oven to 400°f. In a bowl mix your milk and vanilla extract, set aside. In a high powered blender grind your oats, protein powder, cocoa powder, collagen powder, salt, and baking powder until a flour consistency is formed. Add your oats mixture to the bowl and mix the milk and oats until fully incorporated, set aside.

Clean you blender and then place your dates and water in it. Blend on high until a paste forms. Scoop paste into a bowl and mix your pecans and coconut into it until evenly incorporated, set aside.

Pour 1/2 your batter into a greased ramekin, top with 3 tbsp of your coconut pecan date frosting and then cover with remaining batter. Bake for 20-25 minutes.

Once cooked top with additional coconut pecan date frosting, pecans, coconut, and serve.
