Nourish Bowl Mixed Spinach and Arugula

2 cups mixed spinach and arugula (or greens of choice)
1 or 2 6 min soft boiled eggs, cooked and sliced in half
1/4 of an avocado sliced
3” of cucumber diced
1/2 a roasted sweet potato (see recipe below)
A dollop of creamy lime and dill dressing (see recipe below)
1 tsp mani toba harvest hemp hearts

To assemble your bowl place your greens as a base. Top with your eggs, avocado, cucumber, and sweet potatoes. Top with dressing and sprinkle with hemp hearts.

Dressing:
1/3 cup oikos-canada 0%mf Greek yogurt
2 tsp silk cashew milk
1 tbsp fresh lime juice
1/2 a lime’s zest
1 clove garlic minced
1 tsp fresh dill
1/8 tsp pepper
A pinch of diamond crystal salt kosher salt

Whisk all of your ingredients in a small bowl till evenly combined. If too thick add a bit more milk until desired thickness is achieved.

Roasted sweet potatoes:
1/2 a sweet potato cut into 1” chunks
1/8 tsp smoked paprika
1 tsp sugar free maple syrup
1 tbsp avocado oil
A generous pinch of diamond crystal salt kosher salt
Couple shakes of pepper
1/8 tsp onion powder
1/8 tsp granulated garlic

Preheat oven to 425°f. Place your sweet potatoes on a small greased or parchment lined cookie sheet. Toss with oil and seasonings to evenly coat. Bake for 15-20 min flipping half way through. Allow to cool before adding to your bowl.
