Roast Turkey With Cranberry Sauce

Ingredients:

1 turkey (10-12 pounds)
Salt and pepper
1 stick unsalted butter
1 onion, chopped
1 stalk celery, chopped
2 cloves garlic, minced
2 cups chicken broth
1 cup cranberry sauce
1/2 cup sugar
1/2 cup red wine
2 tbsp cornstarch
2 tbsp cold water

Instructions:

  1. Preheat the oven to 325°F.
  2. Remove the giblets and neck from the turkey cavity and rinse the turkey inside and out with cold water. Pat dry with paper towels.
  3. Season the turkey inside and out with salt and pepper.
  4. Melt the butter in a large skillet over medium-high heat. Add the onion, celery, and garlic and cook until the vegetables are soft and lightly browned, about 5 minutes.
  5. Add the chicken broth, cranberry sauce, sugar, and red wine to the skillet and stir to combine.
  6. Bring the mixture to a boil, then reduce the heat and let simmer for about 10 minutes, until the sauce has thickened slightly.
  7. Pour the sauce over the turkey, making sure to coat it evenly.
  8. Place the turkey on a roasting rack in a large roasting pan. Roast the turkey in the oven for about 3-4 hours, or until the internal temperature of the thickest part of the turkey reaches 165°F.
  9. Baste the turkey every 30 minutes with the pan drippings.
  10. Once the turkey is fully cooked, remove it from the oven and let it rest for about 15 minutes before carving.
  11. While the turkey is resting, strain the pan drippings into a saucepan and bring to a boil.
  12. In a small bowl, mix together the cornstarch and cold water to make a slurry.
  13. Add the cornstarch slurry to the pan drippings and whisk until the sauce has thickened.
  14. Serve the turkey with the cranberry sauce on the side, and the pan drippings gravy poured over the top.
