Recipe to – As a kid I used love to tag along with my dad when he donated blood so I could share his peek freans canada fruit crème cookies with him afterwards while we hung out in the recovery room

. As an adult I was pleased to find they had come out with a no sugar added version that I could treat myself, guilt free, but still tastes just like the ones I had as a kid. Every time I eat one it brings me back to those memories of our trips together and one of the many selfless things my dad has always done to give back to his community.

Serves 2

Creme filling:
5 tbsp 1%mf cottage cheese
1 tbsp low fat plain cream cheese
6 tbsp oikos_canada 0%mf plain Greek yogurt
1 tsp vanilla extract
1 scoop optimum nutrition vanilla protein powder
3 tsp swerve sweetie powdered sugar replacement

Jam filling:
3/4 cup frozen strawberries
1 tsp prana snacks chia seeds

For the cream filling dump all your ingredients in a high powered blender and blend until a smooth consistency is formed. Set aside or refrigerate overnight.

For the jam filling microwave your frozen berries for 1 minute (or till warm and fully thawed). Add your berries and chia seeds to a high powered blender and blend until chia seeds are broken up and a sauce is formed. Refrigerate till thickened (I made this the night before).

Prepare and cook you pancakes according to package directions. Layer your pancakes with the cream and jam fillings. Top with fresh strawberries and a peekfreanscanada Life Style no sugar added fruit creme cookie.
